The Breban company is one of the last family owned company producing artisanal sparkling wines in the South of France. The grand-father, Raymond, started elaborating sparkling wine in his garage in 1942. He has then decided to add a full range of wines from Provence. Since that time, two generation have been managing the company with the same passion and philosophy for quality. Today, they are famous in France and all over the world for the quality of the wines of Provence and for their premium hand crafted sparkling wines.
100% Vermentino (locally named Rolle)
Mimi en Provence is the fruit of the traditional grape in AOP Cotes de Provence white of Rolle. This Cotes de Provence expresses itself perfectly in the 3 years after the harvest. Perfect Terroir to produce a great wine : deep soils made of limestone, clayey sandstone, old alluvial deposit with gravel.
Night harvesting to preserve primary aromas of the grape. From the beginning, the juice is protected from oxydation before pneumatic pressing. Selection of the juices and cold settling for 48 hours. Alcoholic fermentation with controlled temperatures (60.8 Farenheit) - no malolactic fermentation.
Ageing on fine lees.
Light bright colour. Floral and pleasant nose with citrus notes. In mouth, a fresh wine, well-balanced and subtle.
Mimi en Provence white will perfectly match with Provence and Southern Europe Dishes made of fish or vegetables. It can also be appreciated as an aperitive. To be served at 46.4 to 50 Farenheit.
