Founded in 1840, Maison Simonnet-Febvre is a traditional Chablis winery and amongst the oldest in the region. The company grew in the 19th century under the leadership of four successive generations. Melanie, daughter of Jean Febvre married Amedee Simonnet, they developed the company together. They took on the modernization of facilities, building of the winery and loading dock, installation of electricity and telephone. These improvements went hand in hand with increasing national and export sales of sparkling Chablis along with still white wines from Chablis coming from Simonnet-Febvre's domaine.

Nowadays Simonnet-Febvre produces a wide range of wines from their famous Saint-Bris and Petit Chablis to their outstanding Chablis Grand Cru "Les Clos". They create pure and focused wines, each and every one expressing in their own unique way their terroir with an elegant mineral backbone. Simonnet-Febvre is also the only one in Chablis to produce a whole range of Crémants de Bourgogne, maintaining a more than a century-old tradition for the estate.

Maison Simonnet-Febvre produces and vinifies grapes from the four levels of appellation of the vineyard of Chablis. These vineyards are world-renowned for their white wines with a distinctive fresh and mineral bouquet and an ample, generous and zesty palate. They are all produced from one single grape variety: Chardonnay. The soils of the Chablis appellation are composed of limestone dating back to the late Jurassic period. The most important layer is the Kimmeridgian which is very rich in marine fossil deposits. Their wines have a strong personality and a mineral focused character typical of the great terroirs of Chablis. Aged in stainless steel tanks, without stirring, with a completed malolactic fermentation.

Vineyard Details:

Petit Chablis: Planted on top of steep hills on both banks of the Serein river, this appellation offers wines with immediate pleasure; light, fruity and crisp.

Chablis: This is the largest and the most famous appellation of the area. Chablis wines have a remarkable bright, gold-green hue, lively fruit aromas and a firm, steely structure that allows the wines to age.

Chablis Premier Cru: Simonnet-Febvre vinifies 6 out of the 17 main Premier Cru climats. On the right bank of the Serein River, Mont de Milieu, Montée de Tonnerre and Fourchaume offer good potential for ageing, while on the right bank, Côte de Léchet, Vaillons and Montmains can be enjoyed in their youth.

Chablis Grand Cru: Located on the right bank of the Serein river, facing South-West, this hill is split into seven Chablis Grands Crus climats, each having its own specific nuance. They vinify 3 of them: Les Clos, Preuses and Banchot. Ageing on fine lies in stainless steel tanks is combined with a very moderate and not systematic use of oak barrels.
