Estate

Champagne which is so popular today. The house was founded in 1858, primarily as a wool trading concern. On the death of her husband in 1860, Louise Pommery began to dedicate the company to Champagne production and it soon became one of the region's largest brands. She purchased 120 Roman-era limestone and chalk caves which formed 12 miles of cellars under the city of Reims which allowed storage of more than 20 million bottles. The brand is known for its freshness and finesse, epitomized by the range-topping Cuvée Louis.

Tasting notes

Lightly cooked apples and pears with spice and chalk. Grilled toast, full-bodied, creamy and soft texture with pretty acidity coming out with light almond notes on the finish.

Description

This Champagne was made by Pommery specifically for pairing with food. It is aged six months longer than the Brut Royal, for a total of 42 months on the lees. The dosage is lower, and the selection far more strict: only half of the forty villages that go into the Royal make the cut for the Apanage. I would suggest pairing this with a rich fish dish, or even a chicken entrée with a cream sauce.
