Vinification

Following the traditional vinification, the grapes are pressed immediately upon arrival at the winery in pneumatic presses. Settling, cold storing for 48h. Fermentation in stainless steel vats thermo­regulated at 16/20C to preserve the aromas. A part of the wine is aged in barrels , the other part stays in stainless steel vats. Ageing in total lies between 8 to 10 months with regular stirring to gain depth and complexity.

Soils:Clay and limestone soils resulting from the weathering of limestone and marl substrate.
