Vinification
Cold soaked for 7 days. Temperature Controlled fermentation - duration 12/14 days. Punch down and pump over allow a gentle extraction and thrust. We are looking for the complete extraction of the color and the strong presence of the most elegant tannins. Aged in oak cask.
Description
This wine is in honor of the Duke Philippe Le Hardi. The most important person in Burgundy Viticulture. Chateau de Santenay was once the residence of the Duke of Burgundy Philippe Le Hardi (Philippe the Bold) (1342-1404) who was the first and foremost ambassador of Burgundy and its great wines.
Château de Santenay is one of the largest wine estates in Burgundy. This prestigious heritage, made up of a remarkable Château with its glazed tile roof and 98-hectare vineyard, is the result of a centuries-old heritage intimately linked to the history of Burgundy winemaking.
Tasting notes
A profound dark ruby color. The nose is very harmonious with a large red and dark fruit range on a spicy note. The mouth is well balanced with fine tannins. The whole is wide, elegant and expressive with a good length for a wine with such finesse and subtlety.
