Tasting notes
This is transporting on the nose, showing an entire world of generous, almost tropical fruit, sweet-crunchy apple, and candied lemon peel against an assertive hit of chalk. On the palate, there is weight and texture underpinned by excellent energy, with honey and lemon drops, hard stone fruit, and apple sweeping in on the hazelnut-flecked finish.
Description
The Chablis Grand Cru appellation is reserved for the most prestigious terroirs covering some 100 hectares producing only 5,500 hectolitres annually. They are situated on the right banks of the river Serein in the most favorable soils, enriched by tiny fossil oysters. All grapes are hand-picked then aged for a 12 months, 80% in stainless steel tanks and 20% in oak barrels. This is the only wine produced by the estate to see any oak aging.
History
The Domaine du Colombier has been a family property since 1887, handed down over several generations. In 1957 Guy MOTHE started to specialize in Chablis. Today his three sons Jean-Louis, Thierry and Vincent work the 55 hectares of vines. These vines are planted exclusively to Chardonnay,
