The 2019 La Demoiselle de Bourgeois is a Pouilly Fume focusing on texture. While it is a touch lively on entry, the lasting impression is that of a supple, silken wine that coats the palate, leaving you licking your lips and the inside of your mouth. Part-fermented in 600- liter barrels, this has contributed to that softness of the wine's texture while the kimmeridgian soils have given a chalky veil. A light tangy, green character meets the supple, savory fruit. Judiciously handled.

Made from a strict selection of the best Sauvignon grapes, the 2019 Pouilly-Fume La Demoiselle de Bourgeois is harvested on the Kimmeridgian marls of Saint-Laurent l'Abbaye, which give deepness, roundness and a remarkable longevity to the wines. The 2019 opens with a very clear, fresh and aromatic bouquet of tropical fruits (mango, passion fruit) intertwined with the fascinating purity of the Kimmeridgian terroir that adds flinty and iodine notes. Dense and intense on the palate, with firm mineral acidity and a polyphenol structure, this is a supple, quite rich but vital and aromatic Pouilly with a long and gastronomic finish. 14% stated alcohol. As is so often with Pouilly Fume, the wine is taking its time. That makes it still young with vivid fruitiness over the wine's rich, creamy character. There is a fine mineral tension at the end.
