A delicious, well-composed and lively Sancerre with aromas of sliced green apples, dried oranges, fresh herbs and some gunpowder. On the palate it's medium-bodied with bright acidity. Plenty of volume with a delicate touch, yet it shows verve. Well driven and seductive. Drink or hold.

This wine is filled with fresh aromas of orange blossom, chamomile, white peach and honeydew melon. Steely in texture, the wine reflects the nose with a wave of cascading acidity running towards a lemon-spritzed finish. Pair with pork tenderloin, any fried foods and roasted cauliflower.

An alluring, fragrant version, with a ripe, concentrated profile to the juicy nectarine and plum notes, flecked with jasmine and fleur de sel. Description
This cuvée comes from kimmeridgian marls, recognizable for its cluster of comma shaped small fossilized oyster shells from the famous and well exposed slopes of Chavignol.
Features: low yields, organic fertilizer only, use of grass cover, everything is made to respect the terroir and to obtain the most beautiful grapes.
Food pairing
Sancerre Jadis, a true original, deserves an original cuisine that allies local and exotic tastes, principally fish or white meats that play with salty-sweet associations. For example, chicken breast with honey and rosemary or curry and candied oranges. Also a great pairing with goat cheese, asparagus, roasted turkey and pork chops.
History
For ten generations now the Bourgeois family has devoted its passion and values to Sauvignon Blanc and Pinot Noir, becoming Sancerre’s most well-known producer. The company is now led by the current generation of the family – Jean-Marie and Remi Bourgeois. The winery and family base is the village of Chavignol, and Domaine holdings can be found on a mosaic of plots throughout Sancerre and Pouilly-Fumé. Each plot is isolated and worked in respect of its origin to reveal, in the most precise and true way, the expression of its terroir, whether we are talking Kimmeridgian marls, flint, or limestone clay soils. We see this expressed in a dizzying array of bottlings, many of which are amongst the most sought after of their kind in the Loire each year.
Tasting Notes
Its green gold color is bright and luminous. Its nose is quite expressive and complex. It opens beautifully on exotic fruits, green mango, citrus, honey and a hint of menthol. The mouth is powerful, round and harmonious. Refreshing and with sharp minerality, it has a long complex finish.
Vinification
After pressing, the juice is allowed 2 days of natural clarification to reduce sediment without filtration. Next, the juice is placed in barrels and tanks. After fermention the Sancerre Jadis is racked and bottled in accordance with the lunar cycle.
