A delight at the beginning of the meal, La Porte du Caillou is an excellent companion to fish dishes, scallop with mango emulsion, white fish in curry and of course goat cheese.
History
For ten generations now the Bourgeois family has devoted its passion and values to Sauvignon Blanc and Pinot Noir, becoming Sancerre’s most well-known producer. The company is now led by the current generation of the family – Jean-Marie and Remi Bourgeois. The winery and family base is the village of Chavignol, and Domaine holdings can be found on a mosaic of plots throughout Sancerre and Pouilly-Fumé. Each plot is isolated and worked in respect of its origin to reveal, in the most precise and true way, the expression of its terroir, whether we are talking Kimmeridgian marls, flint, or limestone clay soils. We see this expressed in a dizzying array of bottlings, many of which are amongst the most sought after of their kind in the Loire each year.
Soil
Clay and limestone. The slopes and hills separating the village of Chavignol and the town of Sancerre are made of clay and limestone soils (65% clay and 35% limestone). "La Porte du Cauillou" comes from these vineyards that have been planted with vines for a long time.
Tasting notes
"La Porte du Caillou" is a wine that offers aromas of exotic citrus fruits with a subtle yet powerful seductive intensity. Its length originates in the harmony and quality of the soil.
Vinification
This wine is fermented in temperature controlled stainless steel tanks then is aged for 5 months on its lees with the fermentation preserving all the aromatic potential.
