Very dark crimson. So intense there is practically no nose at this stage – to begin with anyway. A little looser and fruitier than L'Ermite. Big and just a tad blowsy though it should certainly give pleasure. In spades. Lots of lift. Expanded in the glass. Very dry finish with real energy.

Made in a lighter style, but still a full-bodied, powerful wine, the dark purple-hued 2007 Ermitage Le Pavillon reveals aromas of creme de cassis, black truffles, cold steel, and crushed rocks. Dense and tannic, with good acidity, resounding richness, and a substantial finish, it is a top-notch effort that should evolve for three decades.

Opaque ruby. Aromas of boysenberry, blueberry, pipe tobacco, smoky spices and olive. Very rich but surprisingly energetic, offering sweet dark berry compote flavors and exotic floral and tobacco notes. The spiciness returns on the finish, which is sappy, impressively focused and extremely long. This has opened up significantly since bottling and looks very promising.

Estate
With roots dating back to 1808, M. CHAPOUTIER is one of the oldest companies in the Rhône Valley. Tasting notes
Deep garnet red in color, with purple highlights, this wine offers aromas of tar, smoke, raspberry, blackberry, walnut and licorice. On the palate, it is complex, velvety and balanced, showing notes of licorice, tobacco and cocoa.
Vineyard
This plot has an area of approximatively 4 ha. It has given its name to this plot selection and has a particular geology. This soil is made up with sediments on a fine layer being on a granitic subsoil. The age of the vines (65 years on average) guarantees a very high quality production.
Vinification
Totally destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. The temperature of fermentation does not exceed 32°C. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard. The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural.
