Vinification

The ideal soils for this elegant Pinot Noir are of granite origin, therefore sandy/clay and containing many large pebbles. Harvesting is performed at optimum ripeness at night or early morning when the cool temperatures help to preserve the fruit’s potential. The grapes are fully destemmed, then cooled down before being put in vats for several days, a process of cold maceration reserved for great wines to bring out the typicity of this excellent variety. Fermentation is performed in contact with oak wood for a few days. Pressing is assured under the best conditions in order to maintain the finesse and fruitiness of the wine. After a long and meticulous maturing process, the wine is stored in cellars until bottling, using innovative new techniques unique to the producer.

Tasting notes

This velvet-labeled bottle houses a lively and bright red with perfumed notes of cherry and strawberry. Cinnamon and nutmeg season its lightly oaked profile. The palate has light tannins that frame the pretty plumb and black-cherry flavors.

Serve it lightly chilled to enjoy all its complexity. The south of France is blessed with so many things – a rich history and beautiful landscapes, a wonderful climate, and green & fertile lands. This wine showcases the best of these characteristics.

Estate

This Languedoc winery is owned by Pichon-Longueville of Bordeaux fame. The vineyards of Mas Belles Eaux stretch over 90 hectares of hillsides in the Languedoc, where they benefit from a varied, complex terroir of Villafranchian gravel over red clay and alluvial soils. The estate was called Belles Eaux because of the numerous springs around the property which run down into the Peyne River, which has a unique effect on the terroir and provide their freshness to the wines of Mas Belles Eaux.
