Vinification
Vinification made with wine grower: Benoit Braujou from Fons-Sanatis in Saint Jean de Fos (Terrasse du Larzac Herault) – the viticulture is entirely conducted by horses, without any chemical treatments. There is no addition of sulfites in the vineyard or in the wines – There is no filtration and no addition of yeast, NEBULEUSE is as natural as wines can get. The vinification is conducted in whole bunch grapes with regular pigeage & remontage (5 times) We only use indigenous yeasts naturally present on the skin of the grapes. After pressing and racking – the wine is only clarified by gravity – we do not filter, and we let the wine rest 6 months before releasing them which keeps it stabilized and ensures consistency.
Tasting notes
Displays strong raspberry and plum notes by the nose as well as a hint of eucalyptus and black liquorice with a touch of leather. The wine is mouth filling but remains very juicy with a lingering smoky finish. Nebuleuse is ideal to be paired with tomato based dishes or white meat such as pork chops or marinated chicken breasts.
Terroir
The Nebuleuse parcel is in the northern part of the Saint Jean de Fos village – a tiny single plot of 6 acres with vine-plants averaging 65 years old and a low yield giving us the right balance between subtle extraction and lingering tannings. The harvest happened on September 7th – all by hand. The grapes are partially destemmed and put in concrete vats right after the harvest. We are non-interventionist in the viticultural approach.
Description
NEBULEUSE is named after the Male horse at the Fons-Sanatis estate. He is from the Barentin Breed. 163 is the size in centimeters of the horse’s withers. Nebuleuse is 11 years old.
The bottle is from the southwest of France – the cork from Roussillon and the labels are made of vine-plant leaves and stems. There is no use of foil in our packaging – we believe the container should be as environmentally conscious as the content. Changing the world one bottle at the time! We recommend drinking Nebuleuse with red meat and baked potatoes – also goes well with tomato-based dishes.
