The 2020 Cavaliere (Sangiovese) is gorgeous. Bright and effusive, with lovely transparency, Cavaliere shows how compelling Sangiovese can be on the coast if handled expertly. Crushed flowers, sweet red berry fruit, spice, mint and a hint of orange zest are nicely delineated in this classy, mid-weight offering.

An important difference between Michele Satta and other big names like Ornellaia or Sassicaia is that the determined and very likeable wine producer in Bolgheri runs the oldest winery that belongs to a winemaker. Satta founded its winery in Castagneto Carducci at a time when grape growing in the Tuscan region was in its infancy and great successes were still to come. The path taken by the innovative winemaker was new in Bolgheri at the time. Thus he, supported by his wife Lucy from the very beginning in his decisions, not only focused on the international varieties Cabernet, Merlot and Syrah, but also on the noble Sangiovese vine.
Tasting notes
It is the Sangiovese selection of the estate vineyards, harvested at full ripening. It
is fermented in 30 hl oak open vats and maceration is completed with soft
manual submersions of the cap and one pumping over procedure per day. In the
vineyards great care is given plant by plant, following each plant’s productive
balance to express the best qualities of this grape, the symbol of Tuscany, for its
elegance and nobility. 100% Sangiovese
Vinification
After a previous passage, the grapes to produce this wine remain on
the plants for a further week to prolong maturation. Harvest is manually made
with great attention to the health of the cluster; then 70% of the grapes is destemmed
and crushed.ures. The perfect maturation of the grape and the grape
seed enables us to extend the length of maceration, that can last for months.
