Aromas of red plums, blueberries, cocoa beans, light spices and bark. Medium-bodied with fine, slightly chewy tannins, bright acidity and a velvety texture. Delicious and pretty, with ripe-fruit character and notes of spices to close. Vegan.

This deep garnet-colored wine has aromas of blackberries, cassis and dried sage. Tannins come on strong at first and then drop off to reveal black cherry, Chambord, mocha, eucalyptus and crumbled sage leaf flavors. Shimmering acidity keeps the palate aloft from first sip through the lasting finish.

Matsu, which in Japanese means to wait, is a tribute to all the wine growers who, for generations, have devoted their efforts, wisdom, respect and sacrifice to working the vineyards. The wines, which come from old vineyards that are cared for according to traditional methods and following the times that nature sets, preserve the boldness of the Toro D. O., combining it with an alluring smoothness. A philosophy of respect for natural processes is followed when taking care of the vine and making the wine in the bodega, and external intervention is kept to a minimum. Harvesting is carried out manually with a careful selection of grapes and always picked at the optimum moment of maturity. The grapes were harvested in boxes and in small trailers, which were then quickly taken to the winery. This is a unique and visually stimulating wine portfolio that over delivers on both price and quality.

Tasting notes
This concentrated wine has a deep cherry color with violet colored notes in its border. Thanks to the barrel aging the wine acquired a very intense nose with mature black fruit aromas, well integrated with the toasted, spiced and smoked notes. Corpulent in the mouth with very mature and round tannins that give it’s a velvety texture. In the long and persistent aftertaste appear once again mature fruit perfectly assembled with the roasted character of the wood.

Vinification
From a selection of Century old vineyards of very limited production, cultivated according to the biodynamic technical standards. Fermentation and maceration during 3 weeks in reinforced concrete tanks. The malolactic fermentation takes place in new French oak barrels, while its ageing for 16 months in barrel. This wine has not been filtered and has been clarified without using aggressive processes.
