Made mostly from Malvasia Castellana, chiefly from small parcels of old vines, this is one of the best whites in Toro. Sandy soils offer finesse and elegance in a wine laden with pear, lime and fresh pineapple. It ages for a little over a year in 500L oak barrels, and offers a minty freshness. The acid is lemony and direct, and the wine finishes with a bright pithiness.

Description
La Jefa is a new 100% wood-fermented Malvasia from pre-phyloxerra vines in Toro, blended with five other unspecified white varieties. It is the latest wine in the Bodega Matsu portfolio, a project that shows the Toro region can make wines of real finesse and save 100+ year old vines in the process. La Jefa uses very old vines in Toro, making wine in a fresher style. La Jefa comes from a selection of vines from 50 to 150 years old. The vines grow on sandy soils with a high granite stony component and are cultivated naturally as is the tradition in Toro. The grapes are spontaneously fermented in new 600-litre French oak casks with light toasting. The result is a creamy, rich and ripe wine with a good structure and beautiful acidity that perfectly balances everything out.

Matsu, which in Japanese means to wait, is a tribute to all the wine growers who, for generations, have devoted their efforts, wisdom, respect and sacrifice to working the vineyards. The wines, which come from old vineyards that are cared for according to traditional methods and following the times that nature sets, preserve the boldness of the Toro D. O., combining it with an alluring smoothness.
Tasting notes
La Jefa is deep straw and gold in color. The aromatics are complex with ripe stone fruits, wild honey, seasoned wood, a touch of tropical fruit and vanilla pod. It is complemented with slight aniseed nuances, to reflect a nose harmonized by its aging in casks. It is a mouth-filling, silky wine, with great creaminess, good acidity, perfect balance and elegance. The finish is long and complex with great length. This is a special wine!
