Harvest

Night harvested and cold soaked prior to primary fermentation to carefully extract soft tannin, color and freshest expression of primary red fruit characteristics. 8-14 day Primary fermentation. Aged in French Oak barrels and a small amount of American Oak for 9 months.

Tasting notes

A core of red currants and fresh straweberry with an earthy layer of mushroom and delicate spices. Medium bodied with bright acidity to balance forwardness of fruit.
