Terroir
Limestone, heavy clay from the Jurassic age, schist and sandstone. The plots are a blend of 3 different "Climates", all located in Fuisse.
Vinification
Pneumatic press / Raking after 24 hours of settled down by gravity / Long fermentation at low temperature between 15 to 18 C / 50% in
Demi-Muits (500L barrels) and 50% in stainless steel tanks / Complete malolactic fermentation.
Tasting notes
Brilliant pale gold with shimmering clear highlights. An elegant and beautifully layered nose that showcases the complexity of its diverse terroir. Crisp green apple,
ripe pear, and citrus zest are backed by a distinct, stony mineral backbone from the limestone and schist soils. The partial barrel fermentation introduces gentle,
integrated undertones of toasted hazelnut, vanilla cream, and a touch of fresh brioche without overpowering the fruit. Broad and textured on the palate, showing
excellent concentration and weight driven by the old-vine fruit. Full malolactic fermentation lends a round, creamy mid-palate, which is perfectly counterbalanced
by a vibrant, limestone-driven acidity. Flavors of white peach, lemon curd, and a subtle saline minerality lead into a long, focused, and sophisticated finish
with a whisper of sweet spice.
