Description

The families of Champagne Moutard Diligent have been living in the village of Buxeuil since the mid 17th century, and have a long tradition of both grape growing and wine production. Located in the Cote des Bar, the vineyard soils are made up of clays and limestones, lending to rich, fruity aromas and good minerality. Champagnes are cellar-aged for at least three years for non-vintage wines and up to ten and fifteen years for vintage wines.

Food pairing

Perfect with shellfish and seafood.

Tasting Notes

Citric nose accompanied by notes of acacia. Lively and balanced on the palate.

Vineyard

Clay-limestone soils on the Kimmeridgian bank of the Côte des Bar, Village of Buxeuil and Polisy. Côte des Bar is characterised by an oceanic/continental climate and soil animated by a Kimmeridgian band. It is made up of a succession of marls and clay limestone aged from 152 to 157 million years old, renowned for their extensive marine fossils and Exogyra Virgula fossilised oysters. This characteristic offers wines with greater roundness, character and complexity than other Champagnes.

Vinification

Settling at 7 C. Fermentation and vinification in stainless steel tanks. Temperature controlled stainless steel vats with cool settling at 7c.
