Tasting notes
The color is cherry red with dark purple highlights. The nose is intense with black fruit aromas (blackcurrant and blackberry) and a hint of spices (bay laurel). The palate is full with crisp flavors of fresh fruit. The tannins are well integrated with an elegant mineral finish.
History
Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine Père Caboche with his children Emily & Nicolas. Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provencal word for ‘horseshoe nails’.
Vinification
Harvesting is carried out by hand picking each plot separately. The grapes are harvested at full maturity and carefully sorted, then slightly destemmed and crushed. Then fermentation takes place under strict temperature control. After the final blend is determined, the wine is aged in oak and stainless-steel tanks.
