Vinification
De-stemming and soft pressing of the grapes, fermentation in stainless steel tanks of medium dimension with inoculation of selected yeast. The fermentation last for 5/6 days, but we decided to extend the maceration time to maximize the extraction of polyphenolic compounds for extra 5/6 days, with a maximum of 12 days.
We proceed with two delestages at the beginning of fermentation phase together with continuous and automatic pumping over. After racking off we proceed with a short operation of micro-oxygenation, to improve stabilization of the colour, followed by malolactic fermentation induced with selected yeast.
